ProTracker v2.3F was as good as it gets. Took a while to get the hang of it, but was quite simple to use with a bit of savvy...

I used Protracker and Noisetracker - but ultimately found OctaMED Pro to offer the best editing features (I think partly because it was built on the OS native Intuition lib).
